Healing Properties:

Grapefruit: grapefruits are a super strong antioxidant, and are active in detoxifying, as well as breaking down fat content in the body. Ruby grapefruits (which I have used in this salad) also contain lycopene, which has been found to be anti-cancerous.

Beetroot: Beets are very alkalising, and are really beneficial to the whole body if you have been overindulging in acidic foods! As an alkaline food source, they moisten the intestines and myristicin and apiod improves blood circulation. They also provide loads of nourishment, namely through vitamins A, B1, B2, B6 and C.

Parsley: parsley contains a freakishly high amount of Vitamin C – half a cup equates to 70% of the recommended daily intake. It also contains high levels of folate, as well as supporting healthy urinary tract function through the antioxidants myristicin and apio.

1 Ruby grapefruit, diced

1 small beetroot, grated or diced

2 dried figs, chopped

Handful of pecans, chopped

Handful of mint, chopped


For the dressing:

Dash of cold pressed olive oil

Juice of 1/2 lime

BIG dollop of agave

3-4 raspberries, crushed

Pink sea salt to taste



Combine all salad ingredients in a bowl.

Whisk the dressing ingredients in a separate bowl

Drizzle over the salad

Season with sea salt to taste
