I am biased, but I think this might be my favourite home-style raw dessert yet! As always, really simple ingredients and easy to make. I am having a bit of a love affair with rosewater at the moment, and having just returned with a beautiful new bottle from India, I had to include it in the recipe!


Rosewater: Commonly used for skin ailments and as a natural toner, rosewater is used as both an external and internal healer in countries as diverse as India, Iran and Australia. Rosewater is often associated with purification, of the body and mind. Used in cooking, or perfumed water, rosewater has a calmative affect internally and externally. Cherries: In Chinese medicine, cherries are routinely used as a remedy for gout, arthritis, and rheumatism  (as well as anaemia, due to their high iron content). For more information, see Choose Cherries However, try to buy only organic as cherries can contain high levels of toxicity and pesticides.  (Interesting side note, see FDA notification of cherry juice as a classified drug in the US –Educate Yourself).

INGREDIENTS: (Makes 4 small serves)

For the Base:  10 Medjool Dates, soaked for around 15 minutes to soften

1 cup of ground almonds/ almond meal

l ½ cup Shredded coconut

2 TBSP Light Agave Syrup

2 TBSP Cacao

2 TBSP Chia Seeds

For the Filling:

About 12 fresh cherries, pitted and halved

Fresh juice of 1 small lemon

1 TBSP Rose water

½ cup of Desiccated coconut

1 TBSP Light agave syrup

Cacao nibs, to sprinkle


Combine all base ingredients, and blend well.

Add more almond meal, cacao and agave to taste.

Press the mixture into four small dessert dishes.

Refrigerate for 1 hour In a bowl, combine lemon juice, rosewater and agave.

Adjust quantities to taste.

Add cherries and coat in the mixture.

Refrigerate for ½ an hour.

Add the desiccated coconut and combine well.

Spoon into the dessert dishes, and sprinkle with cacao nibs to serve.
