These snowballs are AMAZING! The shredded coconut and chia seeds make them super crunchy and fresh tasting, and they have no sweeteners to bind, just Medjool dates and cold pressed coconut oil.


1 cup shredded coconut

3 tablespoons of cacao powder

2 tablespoons maca powder

10 Medjool dates

1 tablespoon tahini

1 handful goji berries

2 tablespoons of cold-pressed coconut oil

Good shake of chia seeds


Using a hand-held blender, combine the dates and coconut oil until mostly combined and creamy in texture.

In a separate bowl, combine the coconut, maca, cacao and chia seeds.

Add the date mix, then the tahini and goji berries.

Make small balls from the mixture, dust with coconut and refrigerate.
