Miso for breakfast – is there any better way to start the day? In this version I used a rice wine vinegar, ginger, green chili and barley miso base and added season vegetables and gomasio to serve. So easy, so amazing!

Ingredients:

Dash of sesame oil

2 tablespoons barley miso paste

1 tablespoon rice wine vinegar

Tamari to taste

1 teaspoon freshly chopped ginger

1 teaspoon freshly chopped green chili

Handful dried wakame

1/4 cup daikon, peeled and sliced finely

1 small purple carrot, peeled and sliced finely

small handful chopped kale

fresh coriander and flat leaf parsley to serve

Method:

Warm through the ginger and chili in sesame oil

Add vegetables and lightly cook for 1 -2 minutes

In a separate bowl, combine miso paste, rice wine vinegar, wakame, Tamari and 1 cup of boiling water.

Stir to combine

Add vegetable mix

Sprinkle with herbs and gomasio to serve.
