Woohoo summer! This raw salad is light, fresh and so easy to make! I use the lettuce leaves to make wraps, however you could omit these altogether and serve the remaining ingredients as a salad in their own right.

As always, aim for local and organic ingredients! Try especially to use organic pineapple and cucumber, as both are quite water-heavy and will absorb any toxins and pesticides with great gusto. Avoid tinned pineapple – not only is it weird but full of sugar and void of life.

Healing Ingredients:

Pineapple: raw pineapple is commonly adopted in traditional remedies for digestive problems, hay fever and skin disorders. Pineapples are high in Vitamin C, as well as containing ample doses of bromelain. Bromelain is an enzyme with  natural anti-inflammatory capacities, also assisting in breaking down the amino bonds in proteins, which enables strong digestion.

Serves 4 as a main, 8 as a snack or starter

Ingredients:

1/2 large or 1 small fresh pineapple, diced

1 medium cucumber diced

Juice of 1 lime

Large bunch of mint leaves, chopped

Handful of shredded coconut

Rinsed iceberg or cos lettuce leaves, to wrap

Method:

Combine all ingredients in a salad bowl, and dress with the lime juice.

Arrange the lettuce leaves on a plate, and scoop small amounts of the salad mixture into the leaves to serve.
