Healing ingredients:

Coconut: a truly amazing food, coconuts provide the body with a range of nutrients including bacteria, magnesium, calcium and potassium. As a food source, cultured coconut forms an alkalising and anti-fungal yoghurt that soothes the stomach and repairs minor damage to the intestinal lining by rebalancing the pH state of the gut to promote a healthy inner ecological system.  Rich in lauric and caprylic acid, the probiotics in coconut yoghurt help to “heal & seal” the intestinal lining – reducing the risk of food particles leaking through the gut wall.

Ingredients:

1 cup coconut water from fresh young Thai green coconut

4 cups fresh young Thai coconut meat

4 vegan probiotic capsules (250 billion dosage per cap)

1 teaspoon stevia powder

Method:

In a blender, blitz the coconut meat and water until it forms a pudding like consistency.

Empty the probiotic capsules and stevia into the mixture and blend until combined.

Pour mixture into a wide mason jar, leaving enough room for the yoghurt to rise.

Cover the jar with paper tower or muslin cloth, and set on the bench for 24-36 hours (depending on the heat in your home and the consistency of the yoghurt that you would prefer), checking every 5 or 6 hours and stirring if necessary. The longer it sits, the more sour it will become.

The yoghurt will keep in the fridge for about a week, but it probably won’t last that long!

Add to fruit, oats or to savoury meals such as a roasted chickpea salad, like I did!
