This is a really easy raw salad, and can be altered depending on the ingredients you have at hand – parsnips or beetroot can become the ‘pasta’, and the pesto modified to suit.

Healing Ingredients:

Basil: A calming and soothing herb useful to aid digestion, stomach aches and anxiety, basil is also a high source of calcium.

Serves 4!

Pasta Ingredients:

2 zucchinis

Dash of lemon juice

Rock or sea salt

Pesto Ingredients:

1 cup of pine nuts

1/2 cup pistachios

4 brocollini florets, finely diced

Juice and zest of one large lemon

1 cup of basil leaves

1 cup of mixed herbs (oregano, sage, rosemary)

1 small chilli, finely diced (including seeds for a hotter pesto)

3 tablespoons of cold-pressed olive oil

Salt & pepper to taste

1 cup of semi-dried tomatoes, chopped

1 cup of pitted mixed olives, halved

1 cup of mixed seeds (sesame, pepitas, sunflower, flaxseeds…)

Method:

Using a peeler, create thin, small strips of zucchini

Rest in a bowl with lemon juice and salt.

For the Pesto:

Set aside the olives, sun dried tomatoes and mixed seeds.

Blend all remaining ingredients until thick and creamy using a handheld blender. Add salt and pepper to taste. Add  extra olive oil  and lemon juice as required.

Dollop on top of the zucchini pasta and add the sun dried tomatoes and olives.

Gently tir through until all is combined.

To serve:

Sprinkle with mixed seeds.
