These bars make an easy and simple breakfast snack – chia seeds are higher in iron than spinach, and have more antioxidants than blueberries. Figs are a good source of dietary fibre, and sunflower seeds are an excellent source of Vitamin E. One of these and a green smoothie is the perfect start to the day!

Ingredients:

10 figs, soaked for 20 minutes and diced

5 dates, soaked and diced

2 tablespoons black chia seeds

1 cup almonds, chopped

1/2 cup pecans, chopped

1 tablespoon cardamom – add to taste

1 tablespoon sunflower seeds

Method:

Combine all ingredients in blender

Press into flat tray and cover.

Refrigerate until set, and slice into bars to serve.
