raw berry coconut popsicle

Sometimes it is simply too hot for breakfast, lunch and dinner. Luckily, every $2 shop worth its salt sells popsicle moulds, and making something good is pretty simple.

(Note: for a creamier version, replace coconut water with coconut cream – equally amazing but def not raw!)

Ingredients:

2 cups fresh (or frozen) blueberries

1 cup goji berries (soaked in water for 10 minutes, then drained)

2 cups fresh coconut water

1 cup fresh coconut meat

2 dates

1 tablespoon coconut oil

Method:

Blend all ingredients, pour into popsicle molds and freeze!
