Parsnip, coriander, zucchini and pecans… warming ingredients served raw! So easy and super quick to whip up. Try with cashew, sundried tomatoes and basil, or walnut, shitake and ginger – so many combinations are possible…!

Healing Ingredients:

Pecans: Containing Vitamin E, calcium, magnesium, potassium, zinc, fibre AND antioxidants, pecans are pretty much magical.

Parsnips: Fibrous and nutritious, parsnips contain more potassium and folate than carrots.

Coriander: Another digestive aid, coriander assists the stomach to settle and calm. It also acts as a binding agent – binding heavy metals like mercury and assisting the body to expel all toxins deposited by these metals.

Ingredients:

Serves 4

2 medium red capsicums, tops and insides removed, cut into palm-shaped segments

1 medium zucchini, diced

1 medium parsnip, diced

1 bunch coriander

1 cup pecans

1/2 cup seed mix

Juice of 1 lemon

Generous splash of Shoyu or Tamari

Generous splash of sesame oil or cold-pressed olive oil

Himalayan rock salt and pepper to taste

Teaspoon of diced ginger

OPTIONAL: 1 green chili, diced

Method:

Leave aside a small bunch of coriander to serve.

Blend all remaining ingredients, excluding the red pepper.

Once combined and of a rough texture, spoon mixture into red pepper palms.

Serve with fresh coriander and a squeeze of extra lemon juice.
